Ono Butter Mochi - Emily

5 eggs
3 C whole milk
1 tsp vanilla extract
1 lb Mochiko rice flour*. 
2 1/2 C sugar
1 tsp baking powder
1/2 C butter, melted
1 C unsweetened, flaked coconut

Preheat oven to 350° and grease a 9x13 baking dish.
In a medium bowl whisk together the eggs, vanilla extract and milk. In a separate, larger bowl stir together the rice flour, sugar and baking powder. Pour the wet ingredients into the dry ingredients and stir to blend. Mix in the melted butter and the coconut. Pour into the prepared baking dish. bake for 1 hour and let cool.
