Ingredients
- 1/4 C butter
- 1 onion finely chopped
- 3 to 4 C mushrooms (shiitake, portobello, button - any combination)
- 2 to 3 Tbsp flour (less if you don't like thick soup)
- 32 oz chicken broth
- 1 C half and a half or whole milk
- 1 to 2 Tbsp Paprika
- 1 Tbsp dried dill
- Salt and pepper to taste
- Sour cream
Directions
- Sauté the onion in the butter until soft, not brown.
- Add the mushrooms for another 5 - 10 minutes.
- Mix in the flour until smooth.
- Gradually add the chicken broth, paprika, and dill.
- Cook another 10 - 15 minutes, stirring occasionally to make sure the flour is well combined. When thickened Add the milk and sour cream. Cook a few more minutes until heated through.
