Creamy Mushroom Soup






Ingredients

1/4 C butter
1 onion finely chopped
3 to 4 C mushrooms (shiitake, portobello, button - any combination)
2 to 3 Tbsp flour (less if you don't like thick soup)
32 oz chicken broth
1 C half and a half or whole milk
1 to 2 Tbsp Paprika
1 Tbsp dried dill
Salt and pepper to taste
Sour cream


Directions

Sauté the onion in the butter until soft, not brown. 

Add the mushrooms for another 5 - 10 minutes. 

Mix in the flour until smooth. 

Gradually add the chicken broth, paprika, and dill. 

Cook another 10 - 15 minutes, stirring occasionally to make sure the flour is well combined. When thickened Add the milk and sour cream. Cook a few more minutes until heated through.
