Creamy Mushroom Soup


Ingredients

  • 1/4 C butter
  • 1 onion finely chopped
  • 3 to 4 C mushrooms (shiitake, portobello, button - any combination)
  • 2 to 3 Tbsp flour (less if you don't like thick soup)
  • 32 oz chicken broth
  • 1 C half and a half or whole milk
  • 1 to 2 Tbsp Paprika
  • 1 Tbsp dried dill
  • Salt and pepper to taste
  • Sour cream


Directions
  • Sauté the onion in the butter until soft, not brown. 
  • Add the mushrooms for another 5 - 10 minutes. 
  • Mix in the flour until smooth. 
  • Gradually add the chicken broth, paprika, and dill. 
  • Cook another 10 - 15 minutes, stirring occasionally to make sure the flour is well combined. When thickened Add the milk and sour cream. Cook a few more minutes until heated through.
