1 1/2 C all purpose flour
1/2 C packed brown sugar
3/4 C cold butter, cubed
Topping
1 C butterscotch chips
1/2 C light corn syrup
2 Tbsps butter
2 cups dry roasted salted peanuts (you can use any kind of nuts for this)
Preheat oven to 350°. Line a 9x13 pan with foil letting ends extend up the sides.
In a mixing bowl combine the flour, brown sugar and butter and beat until crumbly. Bake until lightly browned, 8-10. minutes. Remove from oven.
While the crust is baking, in a small sauce pan melt butterscotch chips, corn syrup and butter over medium heat. Stir until smooth, add peanuts and stir until well coated. Spread the topping over the peanuts and bake for 7-9 minutes. Let cool, remove from pan using the foil and cut into bars.
