6 long fresh red or green chiles
1 (2-inch square) piece red onion
2 garlic cloves
1/4 cup distilled white vinegar*
Juice of 1 lime
1/4 tsp salt
1/4 cup honey
*I use apple cider vinegar
Place the chiles, onion, and garlic in food processor and finely chop. Place in small saucepan along with vinegar, lime juice, and salt. Cover and simmer over low heat for 15-20 minutes, or until vegetables are tender and the liquid is evaporated.

Turn off the heat and allow to cool. Once cool, stir in the honey. Transfer to an airtight container and refrigerate. Use within 1 week.
