1 pkg - 80 oz/280 grams- rice noodles (Excellent brand is better)
2 - 4 cloves garlic
1 onion
2 - 3 pinches of black pepper
2 Tbsp soy sauce or 1 Tbs[p oyster sauce (depending on preferred taste)
1 1/4 C water
1 medium carrot - cut into strips
1 C cabbage, cut into strips
Chicken and/or shrimp, cut into strips
Optional:
Small amounts of green beans or green peas, lemon slices
Soak the noodles in a basin of water for 3 - 4 minutes. Make sure they are drained well and don't over soak.
Saute garlic, onion, and chicken. Add soy sauce, ground pepper, carrots, cabbage (and beans and peas, if using). Make sure all the ingredients are mixed and blended together. (If you can use two ladles or a ladle fork it is easier).
Add water and let simmer for a minute. Add the drained noodles and mix (using two ladles or a ladle fork) over medium low heat. Stir constantly to keep the noodles from burning.
Serve with lemon sliced, if desired.
