1 C unsalted nuts (mixed nuts, pecans or walnuts)
2 Tblsp maple syrup
1 Tblsp coconut oil
1/2 tsp kosher salt
1/4 tsp cayenne pepper (this is the most you should use, use less if you don't like it spicy)
Preheat the oven to 350°. Melt the coconut oil and add the maple syrup, salt and cayenne pepper in a small oven safe pan . Pour the nuts into the pan and stir. Bake for 15 minutes on a rack in the middle of the oven, stirring every 5 minutes.
Remove from the oven and stir one more time keeping the nuts separated. Spread the nuts on parchment paper on a cookie sheet. They will be sticky when they come out of the oven but will harden as they cool.
This is best done in a small batch like this. Any larger and it takes a lot longer for the sauce to cook and harden.
