- 1 1/2 c flour
- 2 tsp baking powder
- 3/4 c sugar
- 1/4 c butter or margarine
- 2/3 c milk
- 1 tsp vanilla
- 1 Tbsp grated lemon peel*
- 1 egg
Topping
- 1 Tbsp grated lemon peel*
- 3 tbsp sugar
- 1 c blueberries
Directions
Grease an 8x8 pan reheat oven to 350°
Sift dry ingredients and lemon peel together, add milk, butter and vanilla. Beat until smooth. Add egg and beat again until smooth. Pour into greased pan.
For the topping, mix together the sugar and lemon peel and lightly stir in blueberries. Sprinkle over the batter in the pan. Bake for 40-45 minutes or until lightly browned. Cool pan slightly before serving.
