Kolaczki (Kowachki)- Iwona

8 ozs cream cheese
1 1/2 C butter
3 C flour
1/2 tsp salt
1 1/2 C filling, like jam, fruit, nut, poppy seed or cheese filling

In a mixing bowl cream butter and cream cheese until light and fluffy. Mix in the flour and salt, wrap in plastic and chill for an hour. 
Preheat oven to 350°. On a surface dusted with granulated sugar roll out the dough to 1/4" and cut into 2" squares. Place a teaspoon of filling in the center of each square. Fold over opposite corners and seal well. Bake for 15 minutes or until the corners begin to brown. Cool on a rack and dust with powdered sugar.

Nut filling
1 lb finely crushed nuts of your choice
1 C sugar
1/2 cup milk
1/8 cup melted butter

Mix ingredients in a medium bowl. It will thicken as it sits.
This can be made ahead of time and frozen. Thaw it when ready to use 

Poppy seed filling
2 C scalded whole milk
1 lb ground poppy seed
1 1/2 C sugar

Mix ingredients in a medium bowl and set aside until milk is absorbed and mixture is cool. Refrigerate until ready to use.

Fruit filling
3/4 C dried fruit of your choice
1 1/2 C water
2 Tbsp sugar
1 Tbsp lemon juice

Combine ingredients in a sauce pan and simmer until fruit is tender, about 15 minutes. Cool and mash or puree in a food processor or an immersion blender.

Cheese filling
1/2 lb farmers cheese or ricotta cheese
4 Tbsp unsalted butter
1/4 C sugar
1 egg yolk
1/2 tsp vanilla
2 Tbsp cream or half-and-half

In a small bowl mix the cheese and butter until smooth. Add sugar, egg yolk and vanilla and mix to combine. Add the cream or half-and-half a tablespoon at a time and mix until smooth
