Green Eggs & Parma Ham - Ben


Ingredients
  • 2 Eggs
  • English Muffin
  • Prosciutto
  • Pesto
  • Butter

Directions

Melt 2 tbsp butter over low heat in small non-stick skillet. Crack 2 eggs into pan and cook over low heat 3-4 minutes, until whites are settled but yolks are still runny. Spoon melted butter in pan over yolks until hot, about 1 minute and season eggs with salt and pepper. Toast English muffin and place prosciutto onto muffin. Transfer eggs on top of prepared muffin and top with warmed pesto
