Chili Rellenos Casserole - George

2 7 oz cans whole green chile peppers, drained and split
2 -3 C Monterey Jack and Cheddar cheese cheese, shredded
2 eggs, beaten
1 5 oz can evaporated milk
2 Tbls all-purpose flour
1/2 C milk
1 8 oz can tomato sauce
1 lb ground beef (optional) *
1 small onion (optional) *
Green onions, chopped

Preheat oven to 350 degrees. Spray an 8x8 or 9x9 baking dish with cooking spray. Lay 1 can of the chiles in the bottom of the baking dish and sprinkle half the Jack and Cheddar cheese and cover with the remaining can of chiles. In a bowl mix the eggs, evaporated milk, milk and flour and pour over the chiles. Bake for 25 minutes. Remove from the oven and pour the tomato sauce evenly over the top and bake for another 15 minutes. Remove from oven, sprinkle with the remaining cheeses and green onions and serve.

* if using ground beef brown it and the onion. Lay 1 can of the chiles in the bottom of the baking dish and sprinkle half the Jack and Cheddar cheese and cover with the remaining can of chiles.
