Crepe batter
3 eggs
1/4 tsp salt
2 c flour
2 c milk
1/4 c meltd butter or cooking oil
In a medium mixing bowl combine eggs and salt. Gradually add flour alternately with milk beating with electric mixer or whisk until smooth. Beat in melted butter or oil.
Refrigerate batter at least one hour. Bake in a crepe pan or or maker. This is a thicker batter so if you want a thinner batter add 1 or 2 Tbsp milk or water. Makes 30 to 35 crepes.
To freeze extra crepes, place them in a freezer safe container, separated by waxed or parchment paper. They thaw well in the refrigerator or you can defrost them in a microwave.
Cannelloni Crepes
1 c small curd cottage cheese
1 3 oz pkg cream cheese, softened
2 Tbsp butter, softened
2 Tbsp chopped parsley
1 egg, beaten
1 Tbsp green onion, chopped (optional)
1/8 tsp salt
6 cooked Crepes
1 15 oz can marinara sauce
1/4 c grate day parmesan cheese
In a medium mixing bowl mix cottage cheese, cream cheese, butter, parsley, egg, green onions, if using, and salt. Spoon 3 Tbsps of cheese mixture into the center of each cooked crepe. Roll up and place in a shallow 9 x 13 baking pan. Pour marinara sauce over filled crepes; sprinkle with Parmesan cheese.bake in a 350° oven for 20 to 30 minutes.
This freezes well so you can double the recipe.
